Made my first fattie last night. Neese's hot sausage, goat cheese and pepper jack cheese, and my super-secret rib rub. Covered with bacon. You know the rest. Looks like I picked a bad day to go on a diet.

That kind of fattie is a wonderful thing, but don't forget to just make some sausage rolls, season with rub and slow cook with your favorite wood.
Keep these bad boys in the freezer and pull them out for snacks, biscuits, sausage gravy, sausage and eggs, etc.
I cook 9 pounds at a time, so that I have some on hand. -
