i season a flat with some bbq rub (dizzy cow lick, but not real heavy)....smoke it indirect with a decent amount of smoke for 1 hour at around 300 degrees. ...then into a heavy pan, 3/4 covered with a hearty red wine (usually a burgundy) and 2 packets of lipton onion soup mix, uncovered for 1 more hour at 325 degrees. .. .then i add a package of frozen pearl onions and a couple of handfuls of baby carrots, and a little more wine (to replace what may have evaporated), and seal the pan very, very tightly with HDAF. ..let it go for another 2 hours at 325 (this is all grid temp, so around 350 dome temp)....remove from the egg, slice the brisket, and return it to the pan in all that liquid (the wine and brisket juice and onion soup mix has now created a very nice ou juis. . ). ..cover and let set in a warm oven for an hour or so prior to serving. ...

A happy healthy New Year to everyone here. Thanks Max! Pretty new to this place. I've been blown away by how great this place is.

Cooked my second brisket over Labor Day and had a lot of family over. A 15lb monster and it was a huge hit and was gone before the day was over! I never even got any burnt ends!

Last night I was at my in-laws for a huge Rosh Hashana dinner for about 40 people. Several people told me that I have ruined traditional braised brisket for them. They couldn't believe how good Egg brisket is.

So I have "kosher" question. I'm not an experienced cook so it might seem silly. I want to cook a turkey on the egg and everyone here seems to go crazy for Mad Max's recipe. Can I use margarine instead of butter for the paste and for the gravy? Do I need to add salt to compensate for the unsalted margarine?

Any thoughts? Thanks!

Happy New Year to all of you! Doing a break the fast at my house next week for Yom Kippur. Don't think I will be smoking a butt. Looks like a typical non BGE break the fast of nova, bagels, white fish and herring.

while i've never used margarine in the mad max method, i sure don't see why not ....and when making gravy, instead of using two sticks of butter, or even margarine for the roux, simply use the turkey fat. ...

Happy New Year! L'shana Tova all!! Hmmmm I wonder how one goes about "koshering" a BGE after a Butt cook? Perhaps buying two eggs, one for the non-kosher cooks, one for the kosher cooks? I digress.....Just wanted to put that out there!! :laugh:

BTW - you could try to smoke and salt your own salmon to make a partial-BGE break-the-fast next week! I wonder if there are any good reciped out there for sucha thing in the BGE?
