It was a dark and stormy night...

... Well, okay... it was dark anyways. I started this cook last night around 9PM looking for a 10AM to noon finish. By sunrise everything was looking good.
I'm doing two butts for a couple of friends today. One is a chef who only cooks on a gasser, the other is a guy that cooks on a bullet, but has only had pulled pork in a restaurant.

Great color, did you add a glaze or sauce to them?

I use a very good quality of cherry wood which has 15%-20% moisture (Most store bought wood chunks have 8% or less) so most of the color comes from that. The gloss comes from apple juice which I spray on after 8 hours or so.Happy Trails~thirdeye~Barbecue is not rocket surgery

I rendezvoused with my buddies at a tavern for bloody Mary's and to make the delivery of the butts. And before I left, I removed an end off the larger one and took a clam shell container to the bartender. I get my wood from Franktown Firewood down in Colorado.
There are plenty of good sources for wood....Shipping is always a factor so there might be a good wood dealer closer to you. In the midwest look at Chigger Creek Products or farther east check out Smokinlicious Firewood (they are high priced but worth it) Also look at Smoke In The Ozarks, they ship in flat rate boxes and the wood is sized down just for ceramic cookers.Happy Trails~thirdeye~Barbecue is not rocket surgery -

Great looking cook.
BTW - I'd recommend one of those thin concrete mats they sell at HD and Lowes. I have a friend who is a fireman and he went off on me about not having one under my Egg on my wood deck. Apparently a LOT of houses burn down each year, starting at the deck.
