Wings Indirect

I saw Little Steven’s post about trying to get crispy chicken skin so I decided to mimic his last try. I decided to try some corn starch wings indirect for the Steelers game last night. I bought one of the foodsaver vacuum marinaters but I couldn’t find my hose so I couldn’t use it.
Here are some wings. Half plain and half with Old Bay
Here they are with cornstarch.
Here are the raw wings on the egg.
Here are the finished ones.
Here are 2 with Sriracha wing sauce.
The wings had a crunchy skin but I prefer direct cooked wings much better.

I'm not sure. I've never done them in the vacuum so I don't have anything to compare.
They were crispy but it was a different type of crispy than if they were done in a deep fryer. The skin was actually hard to tear when I was eating them. -

I assumed it was to make the skin crispy. I was somewhat mimicking Little Steven's post.
