My Wildcats are on ESPN right now playing Toledo, so I made some ribs to enjoy during the game. Seasoned them up with kosher salt, homemade smoked cayenne, and fresh mint.
Then into the hot tub for an hour at 100 degrees.
BTW just started smoking a new batch of peppers today.
Cooked the ribs direct, raised grid, 350 dome flipping every 10 minutes and spritzing with apple juice and cider vinegar for about an hour. Pulled when a toothpick went through them without resistance. Nice
Made a nice snack for the game. -RP

Beautiful ribs! Playing "with" Toledo is more like it. :P I need to tell you a funny story (not) about your smoked chilis.

Good looking ribs, hopefully that Stoops brother we lured away from you guys will improve our defense as we start the Jimbo Fisher era. Cats D looked pretty good last night.
