Egg \"Fried\" Chicken Breasts

Decided to do one of my favorites tonight. "Fried" chicken on the egg.
Started with 4 good sized bone in skin on chicken breasts. Let them marinate in buttermilk and Franks Red Hot for a few hours. Normally I think coat them with crushed corn flakes, but I had none so I substituted with crumbs made by running some Stove Top stuffing through the food processor.
Set up for indirect at about 400*F and put them on.
Near the end I brushed them with Mojo de Ajo and cranked it up to help brown and crisp them up a bit.
Here they are done. Wow they were gooooood. The sage seasoning in the stuffing mix was killer.

Most likely a combo. The stuffing mix will be ground fine and I'll leave the corn flakes kind of coarse so I can get them to have those nice large flakes. like below. I'll do the corn flakes first and fill in the rest with the stuffing mix. best of both I hope.
