Daughter's wedding reception

Got 48 lbs of pork butt ready for the Egg. They are going to be served as carnitas so I rubbed them with salt, oregano, cumin, garlic, and my homemade smoked cayenne pepper.
First time I've done 6 butts on the large with the help of CGS, thanks Tom! I'll let you know tomorrow how they came out. -RP

Nothin and I mean nothin is better than home cookin for a wedding reception and you take it over the top with egged pork BBQ. Outstanding!

I would be very interested and appreciative of any tips or advice after the cook. Im doing the same thing (wedding reception) in about 4 weeks except I'm doing it on two larges with 12 butts totaling 100 pounds. I have one adj rig but I think I'm going to try to make up something for the second large. Maybe a combination of a 2 inch fire ring and a home made double grid? Are you using a standard fire ring on yours or a 2 inch? Thanks for any tips. -

I would think that smoked cayenne would be pretty dang good.

I used the standard fire ring with the spider, pizza stone, and adjustable rig. If you are going to use the platsetter, you will probably have to use the 2" ring. 6 butts are a tight fit. Be sure you have an adequate drip pan. -RP
