Can you remove the fire ring and use a place setter legs down to create more space to smoke a bigger turkey?

If you're turkey is really that big, it seems like you would run out of lump using the setup you've described.
That said, I have cooked a 23# bird on my large using a "typical" setup -- platesetter legs up, roasting pan with v-rack.

Yes! Be careful when closing the lid. I remove the thermometer until the lid is down so as not to bend the tip and break it. Yes I broke one years ago and $23 later cooked.

Turkey, Whole, BGE Size
INGREDIENTS:
1 The Small EGG will hold a 12 lb turkey.
2 The Medium EGG will hold a 18 lb turkey.
3 The Large BGE will hold a 20 lb turkey.
4 The XL BGE will hold 2 - 20 lb turkeys.
