Filets, Asparagus and Potatoes

I haven't cooked steaks in over three weeks and the urge hit me last night at about 9PM. I ran up to Publix and picked up two filets, one smaller one for the wife and one two inch thick hunk for me. Picked up some asparagus and spuds to go along with them. I sprinkled the asparagus with olive oil, fresh cracked salt/pepper, parmesan cheese, and a pat of butter. Cooked them at 350 in my cast iron boats for probably 20 minutes on a raised grid direct. I cheated on the potatoes and rubbed them with olive oil and John Henrys Spud Rubb and threw them in a 400 degree oven. After the asparagus was finished I removed the raised grid and went direct with the cast iron at around 650 for the sear. About one minute per side on the sear. Then I put the raised grid back on and shut the egg almost all the way down and finished them off. Unbelievable dinner. Hard to believe that steaks can be this good and a whole lot cheaper without leaving home. Hope all has a great day!!

Yeah- I was gonna say it doesn't look like you left them on the raised grid too long .
They look great, along with the rest of the meal. Those cast iron boats look like a handy eggcessory.
Did you use any chips? I cooked some fillets last Sat and I tried out the Jack Daniels wood chips. I wasn't really that impressed...didn't add much flavor. Maybe I didn't add enough. The first time I cooked fillet I used cherry and hickory soaked in red wine and I thought the flavor was great.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -

Yea, we were suppose to go yesterday but I didn't realize that it was the first day of school. My oldest started kindergarten. It was a fun filled day.

If you want a hint of good flavored smoke on your steaks, try Mesquite. Most of the high end steak houses burn some mesquite wood to give their steaks a nice flavor. Sometimes I do it, sometimes I don't. I'm starting to think I would rather have it than not. These were cooked with no chips last night and I missed the light smoke, but only for a second Great steaks but the mesquite does add a little something to them.
