Hello, here is my question. I followed all the steps for overnight smoking a 8.5 lb. butt. The egg stabilized at 250, but it was very very windy. At 11:00 pm meat was at 140 and all was fine. Woke at 8:00 am and egg temp was at 150. Meat was down to 125. Opened the vents cranked back up to 300 to finish. 21 hours total, fire was done and meat at 190 so I called it. Turned out awesome, but what went wrong ? maybe the change in the wind ? Also what is a guru ? Thanks.

    I would say if you had the egg stabilized with the wind blowing into the lower vent, and then the wind died down it could have caused your situation...Many other things could have caused it such as ash clogging the lower grate holes...I have included a link the bbq guru website, you can find out all you need to know from it...HTH[p]Wess
