not so short beef short ribs

Yes the package said short ribs but they average 8" long and over a pound per rib.
$4.59 a pound x 4 ribs
guessing these will go close to 7 hours tomorrow at 250 dome

Pat, give me some details on the mini fest. I haven't kept up with the forum that much.
Those are some nice looking ribs. I keep looking for some meaty ones, but Publix never has them...or at least when I go. Our butcher in Vero closed down. -
Pat, I'm interseted in seeing how you cook those tomorrow.

Chappy, the mini fest is Sept, 10 & 11 at Tuckaway Shores oceanfront in Indialantic about 1/2 mile south of hwy 192. We have all 32 rooms booked so it's just a weekend of cooking drinking and hanging out with eggheads. The owner of the resort owns a XL and could not be nicer. Come on up Saturday and hangout for a bit. As for the beef ribs Petty's on Babcock always has them no need to special order. How's the new baby coming? Give me a call if you have any questions.

Brian I'm gonna play it by ear but the rough draft is 4 hrs naked, 1 to 1 1/2 foiled then finished on the grid all at 250 dome. I'll check the temps but won't pull them until they pass the fork test.

Those are the kind of short ribs I like, they will be great. 6-7 hrs.

If I catch a flight out of Austin early Sunday, what time will they be ready :woohoo:Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Those look great, nice and meaty. I've make them and smoked them at 250 for 9 hours indirect. After they were done I just cut the bone off, which was really easy, and and served them them like a wonderfully flavored steaks, tender, jucy, and flavorful.
