Okay, I consider myself (as a full on type A) a very neat and clean individual. When I cook, dishes and pans are washed and put away as steps are completed and when dinner is done nothing remains but the serving dishes, utensils and dishes...
...however, I have NEVER IN MY LIFE cleaned my knife block. So, while cleaning the kitchen this morning (it was on my honey do list, daughter coming home to visit on Monday), I moved the knife block and thought, I wonder just HOW I WOULD GO ABOUT CLEANING THIS THING...it has to be growing SOMETHING deep down in those crevices...Okay, Advise Away forum bros and sis's...
...later tonight, a non-red-meat dinner and veggie dish never posted before, can't wait to try the new recipes.

Throw it in the dishwasher and take out before the hot dry cycle as the heat may loosen the glue.

never allow a wood cutting board to become sodden and soaking wet, it will swell and when it shrinks it will crack and (potentially) warp
salt and lemon juice rubbed into the block is one treatment, as is a wipe down with mild bleach/water solution as a sanitizing agent.
if it is really bad, you could always sand it down and retreat with mineral oil.
other oils can become rancid (olive oil, fats, etc.), but mineral oil is non-toxic and will provide a decent moisture barrier.
but never ever ever soak a wood cutting board -

and once in Florida, beat Richard's little ass till he cries like a baby, and then we'll get all liquored up and stuff him...in a dishwasher!!

Okay, I probably jumped the gun, after removing all the knives I discovered that the (wusthoff) block knife holes go all the way through the block, duh...upon a closer inspection only ONE hole had a few crumbs near the base...I took it to the garage and blew compressed air through it, brought it back in, oiled it up with my butcher block oil, retunred the knives and now it is nap time before tonights cooking....
