For quite awhile now, I have been looking for the time to make this happen. Of course, I followed Clay Q's recipe and the results were good.

As you can see, the finished pic shows slightly over cooked beef. The misstep was actually during the dutch oven step - I could not get the dang meat to 215 degrees. I checked the temp with my thermapen just to be sure, but it sat there at 206-209 for over an hour. Anyway, after 3.5 hours in a 2-hour step, I moved on.

All in all, great recipe by a fine cook. Despite the poor execution, the results were good, as well.
