Injecting Pork?

I was going to try Dr BBQs injection recipe and was wondering since it has pineapple juice is there a time limit to injecting so the citric acid doesn't start to cook the meat, or does that just happen with more delicate meats?

Technically that starts as soon as the injection touches the meat. Why do you ask?

I have tried that and personally I would not do it more than a few hours before you put it on the BGE.BGE'er since 1996 Large BGE 1996, Small BGE 1996, Mini BGE 1997

With the Chris Lilly recipe that one was injected the night before but with the pineapple juice I wasn't sure if that would affect it. -
