With all the Eggin going on over the 4th weekend and family gatherings, what is your family's go to side(s) for traditional Q.

Here is ours

Rice dish
2 cups Rice
1 can Cambells French Onion soup
1 can Cambells Beef Consomme
1 can water
1 stick butter cut up

All into an oven safe bowl (we have been using the same bowl for 40+ years)
Into a 400 degree oven for 50 minutes

I think someone took a handful and put it in their pocket once B)

It's an expectation at family Q gatherings. It's kinda like - it doesn't matter what else we are having but who will make the rice?

    We don't cover - the onions from the french onion soup float to the top and the top gets a little crispy (just a little). We have some friends who put some grated cheese on top the last 10 minutes or so but we leave out the cheese.

    Gazpacho - this is our *new* go-to summer side. Easy to prepare, and nice cold gazpacho is really refreshing on a hot summer day! Can be made ahead of time - even better if made the day before.

    I agree. Here is one recipe that I like.

    Soup, Gazpacho


    INGREDIENTS:
    8-10 Whole Plum Tomatoes, Coarsley Chopped
    2-3 Whole Unpeeled Cucumbers
    2 Red Onions, Chopped
    2-3 Red Peppers, Chopped
    6 Cups Tomato Juice
    1 Tbs. Salt
    3 Tbs. Garlic, Minced
    1/2 Cup Olive Oil, Spanish Extra Virgin
    1 Tbs. Lemon Juice
    1 1/2 Tsp Pepper, Black
    1/2 Cup Red Wine Vinegar




    Procedure:
    1 In a food processor coarsley chop.. Chill; pour into a bowl and place a dollop of sour cream with a thin slice of lemon to top off.

    We relied on the garden for our sides on the Fourth --

    1. Refrigerator pickles with sesame oil and rice vinegar

    2. Butter beans cooked in homemade chicken stock (garnish to taste with fresh cayenne, Tabasco, and habanero chiles)

    3. Purple potato (not from garden) salad with grainy mustard, capers, and Mexican tarragon

    4. Tomato salad with olive oil, fresh basil and oregano, and garlic (had 5-6 kinds of red, yellow, and purple tomoatoes)

    I love this time of year.

    I saw a receipe while crusing the forum. I tried it yesterday and it was a favorite and a request has been made to cook it next time also. It was sliced sweet potatoes. I sliced 1/3 inch thick, cooked at 375 degrees after brushing with a light coating of olive oil and using a light dusting of salt and pepper. Be sure to take off the skin before cooking. I cooked for about 15 minutes per side or until soft. About 5 minutes before done, I sprinkled with cinnamon and sugar. They were great.

    Here is a German Red Cabbage salad I made, a different twist on cole slaw.

    Red Cabbage- Fruit Salad with Sour-Cream Dressing

    4 servings

    Ingredients:
    2 cups Red cabbage, Raw, Shredded
    1 medium apples, Diced, Unpeeled
    1 tablespoon lemon juice
    1/2 cup raisins
    1/4 cup pineapple juice
    1 1/2 teaspoons lemon juice
    1/4 teaspoon salt
    1 tablespoon sugar
    1/2 cup sour cream

    Directions:
    1. Prepare cabbage and apple.
    Use 1 TBS lemon juice to wet
    diced apple to prevent darkening.

    2. Toss cabbage, raisins, and apple.

    3. Mix fruit juices, salt, and sugar.

    4. Add sour cream, stir until smooth;
    add to salad and chill.

    This would be appropriate for
    diabetics if sugar is omitted
    or substituted

    we have had this the last couple years, fried broccoli salad. eggwash and jar of stinky cheese, fry and add to greens, dressing is lemon juice, oil, salt. the dry prepared parm seems better than the fresh for this
