on my first pulled pork....2 hours on the egg and the temp just hit 100....too fast or is this right?

your fine, at 250 dome it will climb to 140 or so fairly quick then slow down before the plateau

Just right. It will skyrocket to 140 or so, then slowly climb to 160-165 where it will stall for a few hours, then slowly climb the rest of the way to the finish line.
