my neighbor is about to cut down an apple tree he says was the wrong variety. my question is for smoking chunks would it matter which variety goes into the bge? does one variety smoke differently?

Nope they all smoke the same. Just make sure the tree bared fruit. There is a pear variety that doesn't produce and it doesn't work too well.
How much does he have? Wanna swap for some Pecan? -
