We had a piece of pig to use and just kinda filled it up and egged it.

Wow -- that rolled pork roast looks sensational! What did you wind up stuffing it with? Are those Apricots? I found a recipe for Roast Pork with Apricot and Shallot Stuffing in a cookbook, and it sounded yummy to me. They wanted you to make a hole in the center of the roast and stuff it sort of like a giant tube, but I love the look of a spiral like you have in your gorgeous pictures, and I've thought I might try it that way. Whatever you did looks SUPER!

Thanks for the kind words. The stuffing in this roll was spinach, apricots, cranberries, and feta cheese. I like feta because it doesn't melt and run all over.
