macaroni and cheese recipe???

My wife's favorite food is mac and cheese. She would prefer to have mac and cheese with any kind of bar-b-q. I have been trying to find a good recipe for twice baked mac and cheese with possibly some bread crumbs and parmasean cheese...I want to make sure I can get some of the burnt goodness on the sides (my favorite part). Problem is, I haven't found a recipe like this especially since I would like to find something with some better ingredients (ideally) besides velveta or condensed cheese soup. Does anybody have a good one or can send me in a good direction? I appreciate it as always.

We just made one Sunday night and we used the recipe that was in the new BIG GREEN EGG cookbook, it has plenty of ingredients and was delicous, lots of cheese

I've made this one from Giada 3 or 4 times. It is delicious. You can substitute Fontinella for Fontina if Fontina is hard to find in your area and bacon(I used homemade buckboard)for the ham. It's a great recipe as you can see from the ratings by reviewers and I completely concur.

Mornay sauce(bechamel w/cheese added), mixed with the macaroni(I like mini bowties)topped with bread crumbs. Baked.

My wife is really picky about mac-n-cheese. I spent about a year coming up with a really fancy recipe. And then found one that was better.

Notice in the video, she adds sour cream, which makes a big difference.
You can substitute the Velveeta. The eggs in the recipe will help emulsify other cheeses, so they are almost as smooth as Velveeta. I like smoked gouda and havarti. You can even gild the lily, and put some butter mixed panko on top for a super crunchy topping. -

Amount Measure Ingredient -- Preparation Method
1 lb Elbow macaroni
1 tsp salt
5 Tbs butter
6 Tbs flour
1 1/2 tsp powdered mustard
1 tsp Dizzy Pig Shakin the Tree
1/4 tsp cayenne
4 cups milk
1 can Evaporated milk
2 cups Mild Cheddar & Monterey Jack cheese, shredded
1 cup Sharp cheddar cheese, shredded
7 oz Parmesian, Asiago, Romano Kraft, shredded
1/4 cup bread crumbs, Italian
1. Cook the Macaroni in salted water til soft. Remove from water & put aside.
2. Melt 5T butter, adding flour, cayenne, Dizzy Pig, salt & mustard - stir on medium heat til slightly browned.
3. Slowly whisk in cold milk so that no lumps form. (Alternate adding cheese and milk)
4. Allow to thicken to a heavy cream consistency.
5. Add the precooked macaroni.
6. Sprinkle with the Italian Bread crumbs
7. Transfer into a 9x13" baking dish for oven. (I use stainless steel casserole pan for Egg)
8. Place in an oven under the broiler til golden brown or PLACE ON A PLATESETTER or PIZZA STONE IN THE BGE @ 450F and cook til golden brown.Judy

Glenn, my heart stopped when I read that recipe! Literally, LOL! 2 1/2 lbs PLUS a cup of cheese and 2 sticks of butter! Where are my nitro tablets!!! :laugh:

hahaha Let's face it, most Mac-n-Cheese recipes aren't healthy(including the one I submitted) but some qualify as heart attacks in a casserole dish and that puppy is one of them! :laugh: and I didn't even mention the 3 eggs.

if you like the velveta mac and cheese or thats your wifes favorite it might be tough to find a recipe you like that doesnt have velveta, i tried and found i couldnt after a couple dozen different tries. you can upscale the velveta mac and cheese by adding other cheeses to the velveta, i also like some stewed tomatoes in with it. gdenby's recipe has velveta in it, i might try that onefukahwee maineyou can lead a fish to water but you can not make him drink it

This is the award winning James Beard Macaroni and Cheese. But, for myself I love any short pasta with Campbell's cheddar cheese soup. You can add lobster, vegs or chilis or anything to either of these ideas. Buttered crumbs or potato chips or crushed fritos on top.
