have two chubs on the large tonight for the first time, at what temp and time for the cook? I put them on at 6 30 at about 350 is this too high? thanks

I forgot to mention tthey are 2-- 1 lb rolls of tennesee pride sausage rolls got em stuffed with lots of cheese and hpt peppers.

I would lower te temp. I do my fatties at 250. If I need to, for time issues, I will bumb temp. up towards the end.
When you said chub I was thinking loney...hahaha

I smoke at 250.Depends on the size.3 pounder,couple of hours.10 pounder 5 hours.I like lo and slow because it is so dense.
