Found a Plank Cooking by Scott & Tiffany Haugen cookbook in Corpus Christi last week...
Brought back some assorted fresh frozen fish from the L-Head fishmonger -- Red Fish, Red Snapper, and Flounder -- along with some jumbo Gulf shrimp -- probably the last I will see in quite some time to come
So....
Found a used cedar plank and the last of the new cedar planks, prepped them according to Plank Cookbook (who knew you were supposed to place them cooking-side down on the fire after soaking/before placing food on them :ermm: )
Anyway, on with the show!
Picked up the "natural" and uncured chicken sausage in Albuquerque when picking up #1 son from East Coast Adventure -- glad he won't venture into fresh seafood at times

That looks great! You are right, who knew you were supposed to sear the cooking side of the plank first, heck, I didn't even know there was a plank cooking cookbook :P
I've been doing salmon on a plank for ten years or more, love it :woohoo:
