Beef Jerky Temp too high :(

I'm trying to keep my temp for jerky down to 150-160 but it's staying right at 200. Any ideas on how I can get the temp down. Thanks, Mark

Must not be a lot of jerky people out there...oh well. I added some more used lump to my coffee can which i assume would lower the temp for now. Looks great

I do jerky @ 190-200 degrees from 3 to 5 hrs. using a coffe can and it comes out great. Good luck.

Thanks, It's holding at 170 now. Just don't know how long to leave it on. Been about 8 hrs so far and I tried a piece and it was very good just not tough like jerky yet. Any tip on how long? Thanks, Mark

I'm not an eggspert at jerky, but I smoke until there is no moisture on the meat which is sometimes near 5 hrs. I then place in zip lock bags and into the fridge. After resting and cooled down they toughen up like your normal jerky. Sometimes I can't wait!!!! Hope this helps.

When you are talking about a coffee can could you please explain about that, I love doing jerky and didn't know if it would work on the egg.
