Smokey Chicken Enchiladas

I smoked some chicken thighs for 2 hours raised direct at 275 dome with apple wood, after coating them with Dizzy Pig Tsunami Spin.

I shredded up the smokey chicken, removing the skin:
I took flour tortillas and spooned a small amount of enchilada sauce on them. Added the shredded chicken and then a small amount of mexican shredded cheese.
Placed them in a casserole and covered the top with more enchilada sauce and more cheese.
Back on the egg with apple smoke, set on top of the platesetter and 3 green feet.
Cooked the casserole 40 minutes at 300 dome.
I took it to work and everyone raved about it. This was so easy and it really showed off the taste of the egg.

Those look great Faith, if you want to kick them up a little next time, put crumbled queso fresco inside the enchilada with the chicken. Its slightly salty and doesn't melt, makes a nice contrast to the melted cheese on top. -RP

Nice looking cook. Missy and I did chicken Enchiladas at a FL fest a few years back and there were a big hit. I like the peppers on top, nice touch.

Boston, I just used canned Old El Paso enchilada sauce, but next time I want to make the sauce from scratch.
I used shredded mexican blend cheese (I think it was Sargento).

Molly, that was the large. I had 10 chicken thighs and used a round casserole that's 10 inches diameter, no way it would fit on the mini.

Yet, another delicious idea to do on the EGG. Something different as well.
I like the idea of cooking the chicken at a low temp. I heard there is a BBQ place in New York called THE SMOKE JOINT, and they do their wings at 250 for two hours. They use hickory smoke.
Your recipe is definitely worth trying.

Gary, I like chicken thighs cooked slow, give it a try on the wings, 2 hours might be too long, unless they are really big ones, but you get the idea.
