Somebody sign me up. This round included veal chops, which seem to go better with the squash than ribeye. Or maybe I just liked the chops better.

I love all the winter squash... With butternut, I like to cook a sweet potato, then serve that mixture inside the natural serving bowl on the squash.

That looks amazing. You know I have a butternutsquash sitting on my kitchen counter just waiting to be cooked. Wife brought a nice one home from the market a couple of days ago.

What temps and how long do you reccomend for roasting it?

I love them myself. In the fall I usually go to the rural farmers markets and pick up enough to last through the winter. Tim :P

Cook it. I split it as shown in the pic, sprayed with olive oil and added salt & pepper. Grilled it direct face down for 10 minutes @ 350. Then I flipped them and put 2 tbsp of butter in each cup. Cooked them over to the side of the egg like that for another 15 minutes. Scott
