Flank or Skirt???

Hey, folks ~ what's the scoop on the best piece of meat to use for fajitas? Skirt? Or flank?

I have used both at different times. Cook them at high and fast and cut across the grain. Both like to be marinated 8 hours or so IMHO.

I have used both but the skirt has more flavor than the flank. -RP

Skirt for fajitas all the way. IMHO. Fire hot cast iron, after marinating over night and your good to go.

The consensus is in....Skirt! And if you want a super simple, appropriately flavored marinade.....sprinkle liberally with salt and black pepper, squeeze a good amount of fresh lime juice, press a few cloves of garlic and a small drizzle of olive oil. Into a baggie, into the fridge, and good to go on the grill in as little as an hour, or 4 hours max.

Having grown up in Southern Ca skirt is what is used by true Mexican restaurants. Agree with the other posts about marinating the meat, I liked a good 4 hours. The best I ever had was on a beach over an open fire.

Cooked Flank last week for the first time. It was good but a little too tough for my taste. The flavor was fine but was bursting with the great beef taste I like.
Haven't tried skirt yet but will soon.
