Brisket John Henry Style

Put a brisket on this morning at 0800; brined with JH brisket brine and coated with JH brisket rub. More pictures to follow when done.

Good luck with it. It looks good. It's hard to beat John Henry rubs. I use several of them myself.

He was here in Jacksonville a few weeks ago and I was lucky enough to sit in on a class he gave on cooking ribs and brisket.

I cut an opening in the thicker end and made a large pocket inside the entire brisket; poured the brine and peppers in the pocket. Let brine for 24hrs and set the temp at 225 deg. -
Very nice Chris - I use JH Brisket rub as well but I haven't tried the brine, in fact I haven't brined a brisket yet. I'll give it shot next round. I also like JH Pecan on wibs. I flip back and forth between JH and DP Dizzy dust on wibs

I love the John Henry Sugar Maple rub on the ribs followed by the Pecan rub. I want to know how the JH Brisket rub tastes; currently I use Cook Shack rub. Let us know.
