Finally bought a CI Lodge Dutch Oven...now what?

I picked up a new Lodge 7 qt dutch oven this past weekend. I want to do the Pineapple upside down cake that has been posted recently but what else will be good uses for it?
1. Pineapple upside down cake
2. Jalapeno cornbread
3. Chili

One of my favorite Egged CI Dutch Oven dishes is Sante Fe Style Beef Enchiladas.
But also, try making your favorite chili or spaghetti sauce in the CI at 300-350f. That always rocks for us.Knoxville, TN

Wow thanks for all of the replies and good ideas. I am for sure doing the gumbo! I am a novice level chili cooker...no super secret recipe's here. The recipe on the chili powder packets at the store never taste all that great and are kind of watery where I like it thicker. What do yall use to get the good thick chili?

A few weeks ago ClayQ posted an excellent recipe for doing quick [relatively speaking, 3-4 hrs] using tenderloin and a DO. I have tried it, and it is wonderful. Do a search, I know it is on here somewhere
