Mr. Toad, do you have the recipe for you Italian Pork Loin, served at the NC EggFest. It was awesome. Capt. Rich

    De Medici Pork Tenderloin

    1 - Pork tenderloin – butterfly carefully not to cut completely through loin

    2 - Layer the following – covering the entire loin
    Sprinkle a light dusting of favorite butt rub
    Thick spicy spaghetti sauce – well drained – thin layer
    Fresh ricotta cheese
    Baby spinach

    3 - Place the following in rows
    Artichoke bruchetta
    Roasted red peppers
    Sliced artichoke
    Cremini mushrooms
    red or yellow peppers – one pepper sliced thin strips – for color

    4. – Cover with mozzarella cheese

    5- Tie and give a good sprinkle of roasted Hungarian paprika – for color

    6- Smoke with apple or cherry wood – cook at 350 until internal temp reaches 140 – careful not over cook – remove pork from egg, cover and let rest for 20 minutes – slice and serve

    Thanks so much for posting your De Medici tenderloin recipe. We had it at Carolina eggfest and it was our favorite dish. You actually gave me a copy of it and I lost it on the way home and have been trying to find it since.
