Welcome to the community of eggheads. I've had my egg for 1 week yesterday. Today I am smoking 3 racks of ribs low and slow. Indirect cooking. If you don't have one get a plate setter. 3 racks for 3-4 hours at 250 degrees. Can't wait for dinner. Enjoy.
