Happy Cinco de Mayo!! What are you cooking today?

We're having a small get together to celebrate Cinco De Mayo. I think it's just a reason to get together to eat and drink margaritas.
I'm making Fidel's fajita's, Pato's refried beans and reelgem's margarita's.

What's everyone else cooking today?

I think I'll make Beef & Scallion enchiladas, arroz, frijoles a la charra, and for desert, sopapillas. None on the egg though.

I make it simple. 2/3 Cuervo margarita mix to 1/3 tequilla and shake well. Pour into ice filled glass and top with a splash of Grand Marnier. The GM really smooths out the margarita.

You got my mouth watering Gary. I LOVE soapapillas but I put cinnamon, honey and a scoop of ice cream on top. I like the "low calorie" version.

Grand Marnier is a little pricey but you only need a splash. So a little bottle will go a long way. Enjoy!

somehow my tequilla collection got large, might need a big bottle

wonder how the grande absente i picked up the other day will work with tequilla, that bottle is going to be around for a while, its like instant sambuca, just add water and sugar :laugh:

We're having skirt and chorizo tacos with leftover Waldorf corn/black bean salsa.
Corona Lite for MrsHonker and Sol for me.

And for dessert - Ben and Jerrys Key Lime and Super Chocolate Fudge Brownie Frogurt.
