Hello everyone, my spatchcock chickens comes out perfect, Indirect at 400deg. but i have messed up two chicken hens, the 5lb. chicken hen spatchcock i did yesterday was indirect at 400deg. till 165internal with juice squirting out, but when we bit into it it was tough. please advise....thanks..

Could have just been a bad bird! I used the Whiz method of direct and that worked for me as well. Maybe give it a try next time and see if that helps at all.

check your temp gage . was 400 a real 400???????Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

The hens were old enough to vote. Stick to 4 lbs and under.

I agree with the previous post, Hens or "stewing hens" are tuff ole birds best left for a nice soup/stew, hence the name.

Sir....Absolutely concur with the prior post. Hens are egg layers, and allowed to age. They look nice and plump, but are really only suited for soups and stews. Stick with 'fryers'.
