Shrimp...Time & Temp?

Haven't done any shrimp in quite a long time so I did a search to refresh whats left of my memory. Saw temps from 350* to 450* and times from 3 to 5 mins per side. I know that opaque is the color I need but don't want to over cook. Thanks

Really hot and really fast. Same thing goes, whether grilled or pan-seared...hot and fast.

Thanks Ben will try 450* and flip after 3 mins and check for color.

Unless you're doing raised grid, 3 mins might be a little too long at 450, I think. I usually treat it like fish. Oil the grid, and then flip them once they release from the grid. I'd see if they release earlier than 3 mins, and check for color then.

It depends on the size of your shrimp. Larger will obviously take longer to cook. The smaller the shrimp, the hotter I cook them.
When they begin to curl tightly (note I said begin to curl, not when they are all curled up) they are done. -
