Beef ribs

Here's my latest attempt at short ribs I rubbed them with Dizzy Pig Cowlick and Dizzy Dust(TASTY!!!!!)then smoked them with hickory at 250* for 4+hrs.Anyway,here's the proof...I mean pics :silly:

I have been looking fore short ribs around hear for several months. No one keeps them as they go bad before they are sold. My butcher will get them but I'm the type I never know what I want to cook till a couple hours before!! Really nice job on them.

Thanks Mr. Tuckey,they were delicious :woohoo: I sliced them to make little sandwiches,but me and the kid ate them all before they ever hit the bread Oh well,no need to fill up on bread when there's perfectly good meat available

They look awesome. Never tried short ribs, put it on my list to do. I wonder how the texture would change if kept on another hour or so?
