There IS no "best". Whatever you like can be cooked on the egg. Methods will vary, but if you can cook it on a stovetop or in an oven, you can do it with an egg.
CAN you dry out fish? Sure, you can dry out anything. But you really have to work at it to dry out anything on the egg.
Perhaps if you told us what you would like to cook, we could better help you.I hate it when I go to the kitchen for food and all I find are ingredients!

Spatchcock chicken, standing rib roasts, hamburgers. Pork has been my nemesis. I am doing a lo and slo today and it is giving me a fit! LOL!

That's a wide open question, getting a brisket to where I want it to be is probably the only hard cook.
I don't think I have anything bad cooked on the egg unless I have burned it.
This may give you some ideas. Some are fast cooks and some are slower, but none are hard.

Brisket is hard to cook.
Everything else isn't.
Fish is great on the Egg. Salmon with Raging River and maple syrup is scrumptious.
See GG's photos, all my food looks exactly like that. All the fish I catch are huge too. -

Anything can be hard or easy.
If I were to suggest something forgiving:
I would go with a roast, beef or pork! I feel that either one, doing a slow cook, would be hard to really mess up.

A very long drive. The "Eggs by the Bay" seems to be a big one. This will be my first Fest, OKC, but we put on an "Outlaw Gathering" in Plano Texas last Nov. that was fun. It will become "Official" next Nov. The OKC Fest is in 2 weeks.

Steve are you doing loony in Austin?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

IMO the easiest thing to cook on the Egg is a pork loin roast. It is not really a lo/slo cook so you don't have to plan your day(&/or night) around it. You can go direct or indirect. Just stabilize the Egg at 325ish, plop the seasoned pork loin on the grid then come back in an hour to check the temp. Another short while and you are done, and ready to carve. Or wrap and stick in cooler until your guests arrive.
