I used the rib rack (v-shaped) inverted to set the roast on, plate setter legs up, drip pan
I cooked it at 350 until it was a perfect medium rate (about 135F when I yanked it)...
I also used some mesquite chunks - but just a couple small pieces for flavour!
ALSO - you have TWO wives??? I can't afford ONE! You MUST be very wealthy.
