New Guy Question - Biscuits

Just got my LBGE yesterday and so far I did a pizza, turned out great, sweet potatoes, direct heat - 40 minutes, turned out great and topped the day off with 2 very nice filet mignon with blue cheese crust. So now to the question. This morning I tried my Buttermilk biscuit recipe in my cast iron skillet. Put the plate setter in (legs up) and set the temp at 400*F, dome. Biscuits did rise, and were cooked thru, the bottom browned of course, but the top didn't. I have put melted butter on the dough prior to cooking. The taste was good, the "visual" wasn't. Am I expecting too much or did I screw someting up? Thx

I get mine to brown on top by using a raised grid & getting them higher in the dome. I also use a round pan instead of CI. That way the CI does not heat the bottom faster than the tops. Hope this helps.

Thanks Tom, I will give that a try next time, I haven't yet purchased the grill extender but will do it soon. Rick

Try going with the legs down on the plate setter. This way you get more height. I use the green feet to put an air gap between the plate setter and a pan.

You can make a simple one by just turning a 1/2 size disposeable aluminum pan upside down.
