I made this the Saturday night and was quite surprised at how well it turned out using Alder and a new rub. I'm not sure what made it so good (Alder or Rub) but I was told I will make this again.
7 Chicken Legs W/Thighs
Dry Rub
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Oregano
1 Teaspoon Paprika Spanish Sweet Smoked
1 Teaspoon Pepper White
1 Teaspoon Salt Kosher
1/2 Teaspoon Salt Celery
Coat Legs with EVOO
Sprinkle rub on both sides (lightly)
Set up egg indirect at 250 degrees
Smoke with 3 pieces of Alder
Cook for 4 -5 hours till meat gets to 185-200 degrees
Place in covered pan for one hour or until sides are done.

I personally like my chickens to be cooked to 180+ also. I keep raising the meat temp and actually enjoy it more.
