Left over rib meat, what to do with it?

I have a ton of meat left over from when I trimmed the ribs to St Louis style. Any idea what I can do with them on the egg? They have the rub that I used on the ribs and have been in the fridge for a day

    I have a similar dilemma with my ribs (I also have leftover brisket i need to use up). I actually used my Food Saver so it'll keep a little longer, and then I'll probably use mine to make some pork rib/brisket fried rice, once I decide to make some rice. I may wok the fried rice on the BGE, unless I get lazy and just do it on my stove.

    I have heard of a ribmeat gumbo. I think I saw it on Diners drive inns and dives.
  • cook it with the ribs. heck, it can be better than the ribs themselves.

    or make sausage. i save mine, buy some butt to add to it if necessary, and make sausage.
  • Beans, soup, stew, enchiladas, tacos, burritos, sauerkraut and pork,etc.etc.

    Cook them with the ribs then fridge have rib tacos the next day. They are pretty dran good.

    Nice idea...I've been cooking it, chopping it fine and putting it into baked beans, but that sounds even better, or just as good!

    We cook it with the ribs and plan to use it in burritos,
    chinese dish etc. Trouble is that if you leave them out, people start nibbling and they are all gone. Have never made it to the side dish...tom

    Thanks for the replies. do you think it would be good if I throw them on the grill direct heat just to cook them up and then throw some sauce on them and chow down? If so what temp would work?

    I like to cut mine in small strips, coat with Raging River, then add brown sugar, cook them high in the dome, makes awesome pig candy! :evil:
