First attempt at trimming spares

I don't think they came out too bad for a beginner. Thanks to thirdeye for having that pictorial on your site. As I was saying, not perfect, but hopefully close enough. What do you all think?

What are you planning to do with the trimmings? -
Don't know yet. Might freeze them and cook them another day or throw them on with the spares and save them for something. thinking tamales or enchiladas.

Pig Candy. Cut them into thin slices rub with 50/50 cayenne and brown sugar and cook alongside the ribs. Mmmmmmm good.

They'll be done before the ribs, nice afternoon snack. Take em off when they get pliable, and be carefull the sugar gets hot and sticky.

I hope you kept the trimmings to cook rib tips or even better, pull all the bone out and grind up into sausage....makes for a good eat and already has a great fat to meat ratio....

I kept the trimmings. I will make pig candy out of the skirt and sausage out of the rib tips. Thanks for the advice!

i rub the trimmings extra sweet and smoke alongside...they cook faster, so i chop them, honey and sauce them, and put them back in in foil after about 2-3 hours.
the 'rib tips' get eaten quicker than the ribs around here.
