    I agree with Wess. I'm hot tubbing two fillets right now. I cut it off about a 14 day dry age. Too lazy to take pics this time. Next week when I cut off more I will do a before and after shot.

    I have a friend that works for a high end appliance store installing new appliances.Sometimes people will do a remodel/upgrade and he gets the old appliances to discard because the client just want to be bothered with it.I told him to keep an eye out for a good used fridge.It took about 2 weeks but this is what he came up with. :)

    My beer fridge...I mean curing fridge is 2/3's the size, twice the cost, and when it was delivered it came with a nice half gallon of milk without a lid.

    Getting that thing to the basement was a freakin' mess. I had milk everywhere...all the way down the steps. Apparently the guy used my fridge to store his milk for his cereal at the shop.

    Hey Hoss,

    I basically did the same thing but mine was already in place in the basement...just had to clean it up and turn it on. Got the NY Top Loin sub-primal due out on Friday and an 8 lbs loin curing for BBB due out on Thu.

    Funny how much less flack I'm getting from the boss. :)
