Purpose
They say yo get better bark. I use it because it helps the rub stick. No discernable taste from it.

I cooked 2 10 pounders last night and will be bagging them shortly. It took 20 hours! Is that a small or medium egg in the picture? I have a medium and had to teepee them in and cram the lid shut.

how does a whole pork shoulder compare to the 2packs of boston butts i buy at sams. would the butt be maybe half the pork shoulder. -
Fiil the egg with lump, get it stable at 250* inverted platesetter, drip pan with spacers and grid.
Rub the meat, let sit, cover with mustard, more rub....put it on and take it off when done.
