I decided to try my hand at Pig Candy this afternoon. I mixed Dark Brown Sugar, Cinnamon, Black Pepper and a little sea salt in a plastic bag. Sorry I didn't measure anything, it was all to taste. If I had to guess I would say I used, 1 1/2 cups Dark Brown Sugar, 1 tablespoon of Cinnamon, 2 teaspoons of Black Pepper, 1 teaspoon of Sea Salt. I cut the bacon strips in half so they would be more manageable and put them in the bag with the sugar combination and shook them up making sure to get full coverage.
I arranged them on an expanded aluminum grill topper and grilled at 400º indirect over a plate setter, drip pan and porcelain grid.
At this temperature they were pretty easy to manage and only needed turning once. When they looked done I removed them from the heat.
When they had cooled I cut them into bite sized pieces with a pair of sharp scissors.
I packaged them in single layers separated by plastic film so they wouldn't stick together and then wrapped in foil.

I have been upgrading my camera equipment and just got the lens I used for the last 2 photos, a 105mm Micro Nikkor. I was able to shoot those hand held with the fluorescent light over my desk. I have a new flash on order for that lens that should be interesting. :cheer:

Thanks Molly, It's almost sinful to take something as good as bacon and make it sweet and sticky as well! :laugh:
Next time I may increase the Black Pepper, maybe use a cracked instead of ground also. I found a couple pieces that had enough extra pepper on them to make them interesting and the smoky heat of the Black Pepper was great with the bacon and the sweet.

Morning Jay, Thanks, the cinnamon I'm sure came from here on the forum somewhere. I was tempted to try adding some nutmeg also but got lazy and talked myself into keeping it simple for my first try.

Hey Rick, Glad you like the photo. LOL, I've looked at bacon most of the afternoon and thought it was a nice picture but I am pleasantly surprised and delighted that people are liking the photographs (particularly that one I think). I don't mind at all.

I think your supposed to print before eating! LOL. Use a low salt, low fat ink and you have invented a healthy bacon.
