I have been wanting to try a rack of pork for a while. I decided to cook on this afternoon. I dusted it with Dizzy Dust and set the BGE up for indirect at about 275 - 300. Cooked until the middle reached 160.
This was some of the best pork I have ever eaten. The chops were juicy and flavorful. My wife, who is Jewish and did not grow up eating port, really liked it too!
Highly recommended. By the way, this was one of the Costco racks that sell for $2.99/lb, so it is a bargain as well. ;)
