I hot tubbed them in 120 degree water for about 10 mins (they had just arrived from the grocery store so they weren't super cold) after some EVOO and Dizzy Pig Cow Lick on one, Big Green Egg seasoning on the other.

These were not very thick (maybe 1"), the grill was at 600-650 (as hot as I could get it), and I went 3 minutes per side. Next time I will go 2 mins per side.

Oh, and this was my first cook with my new CI grate. Me likey! :woohoo:
