Just a follow up to the Chicken breasts I did yesterday. They came out really well. Here is more or less the recipe.[p]What you need:
4 boneless skinless chicken breasts
2 sliced onions
enough sliced mushrooms to ~= amount of Onions
finely chopped Garlic. (I like a lot, some like less)
Thin sliced (or Grated) mont Jack Cheese. (enough to cover the cooked chicken breasts)[p]Butter
Some Red cooking wine
Terriaki / Soy marinade[p]
Take 4 boneless, skinless chicken breasts, and trim off any remaining fat. Marinade them in Terriaki/Soy (equal parts) sauce for an hour or two.[p]Put the chicken breasts on the egg to cook at about 375 until done.[p]While the breasts are cooking, saute the Garlic in Butter, after a couple of minutes, add the onions. When the onions have cooked for a few minutes, add the mushrooms, and shortly after add red cooking wine. Let simmer until you've cooked out the alchohol.[p]When the chicken breasts are done, put them on a plate, cover them with the monterry jack cheese. Strain the onion/Garlic/Mushroom mixture and put it on top of the cheese/chicken.[p]You end up with onion/mushroom/cheese smothered chicken that tastes pretty good. Of course you can do this with any grilled chicken breasts also.[p]
