Pork Butt is Great

I now all of us know this already, but I had to say it.
I smoked an 8lb bone in butt on Friday night. I put it on at 7:30, dome 250 with heavy mequite smoke. The guri/maverick combo did a great job and I slept like a baby. I woke up at 6 the next morning with butt temp of 155. I pulled a little eary (192 degrees) which was at 12:30 on Saturday afternoon. I got it ready just in time to watch my Cyclones get demolished by the Jayhawks - at least the butt was good:
As always, plenty of leftovers so I fired up the egg around noon for a layered quesadilla. It went tortilla, cheese, tortilla, chesse, pork butt, onion, chesse, tortilla, cheese, tortilla. It was on for about 10 minutes at 500 dome. Good stuff:

I like the layering idea....never thought about that :huh: Looks damn good from here though

I think I was just lazy and didn't want to make more than one. I was worried that the amount of pork butt that I wanted to put on there would break through one shell - hence the layered concept. Worked great.

By the way - I can't take the layered idea as my own. I stole it from Taco Bell and the idiot customer that thinks he is getting a good deal by ordering from the hot lady!

Now that is whatI call a QUESADILLA. That looks great and you got Taco Bell beat, that's for sure.

That tortilla looks great. Nice job on the butt. I have a big bag of butt still in the freezer from my last cook. I think I may need to get it out and try something like your tortilla.

Wonderful idea with the quesadillas. Other posters are right- pork butt is always good. Were those tortillas the store-bought variety? How did you make the outer edges of 4 or 5 tortillas stay together? Thanks,

Store bought - I put the cheese in between the layers. I assumed the cheese would make it stick together. I did! Try it, it is pretty good
