I see it is a flank steak but, I tried googleing chimichurri and could only come up with resturants. Can anyone enlighten me. Luke Skywalker

Hey there Wayne I love Flank Steak I get it all the time at Sam's Club. Last time I pick up a batch it was only 3.85 per pound. When I was a kid I remember it use to be called poor man's steak.
I even like to coat mine with EVO, fresh ground black pepper, fresh garlic and kosher salt. You can do so much with flank steak, fajitas, and I also make steak and cheese out of it. -
In argentina chimichurri is eaten with steak- like a steak sauce. It is made with various spices and maybe some fresh veggies (they would have to be very finely chopped). I think olive oil is used to mix with it. Recipes would be almost infinite.
I have been to Argentina a couple of times in the last three years and the steaks are exceptional.
I did enjoy putting a little chimichurri on em sometimes. -
Chimichurri Recipe
INGREDIENTS
1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems
3-4 garlic cloves
2 Tbsps fresh oregano leaves (can sub 2 teaspoons dried oregano)
1/2 cup olive oil
2 Tbsp red or white wine vinegar
1 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes
METHOD
1 Finely chop the parsley, fresh oregano, and garlic (or process in a food processor several pulses). Place in a small bowl.
2 Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings.
Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a day or two.
Serves 4. -
