Hot Tubbing Steaks

I went out after lunch to find some steaks. I finally found some select ones, and they were only $3.99 a pound. BOO YA!!! I got 2 tee-bones one for me and one for mom, and I got my buddy Jim a rib eye steak because it was smaller in the package and he doesn't eat as much as me.
Here is Jim's steak in the bag with some butter and some of the spices i used on the ribs the other day.
I took this picture and then he asked why I was taking pictures so I stopped taking pictures. :woohoo: :woohoo:
I put them in and the water was really hot but it cooled off after an hour. I added more.
The egg was at 550 and I put them on and cooked until they looked done. I don't know how to tell but they were great. Mom like's hers well done.
Here is mom's tray before I brought it to her. I don't eat beans. I like them, but I stink up our bedroom like crazy. :woohoo: She doesn't like sweet potatoe.
Mom ate hers watching Reba but Jim and me ate ours in the kitchen. Here is mine. I took one more picture and Jim said I was being really weird taking pictures of food. Here is my steak a little eaten but I couldn't wait. I took the picture when Jim went in to say hi to mom for a while. Jim and me each had a sweet potato wehich is from the community garden in the park this summer. Those were the last ones.
I don't under stand what the pan of water has to do with steaks but they were good.

The hot tub method gets the meat up several degrees. Mine are thrown into a 102F spa for 45-60 minutes and when pulled the internal temp is around 85F. This allows me to sear them around 550-600 and when the internal is 125 or so I pull them. if they were not hot tubbed, the internal would take longer to get up where you want it and the outside may be more charred than you like. Each to their own.

You really need to get a probe type thermometer. If your water was really hot you can cook the steak in the water. There are several health concerns too. Your water should be around 100* and maintain it there by adding a little hot at a time. The idea is to get the meat warm before you cook it so it doen't need so much time on the egg to cook the centre. Maverick or polder thermometers work well. Good job on the steaks though.

Select steaks Dave? You know choice grade are actually a much better choice for you to select than select?
If you use a little more charcoal in the, getting the meat closer to the hot coals, you can get a little better color on those steaks. The do look like they turned out nicely.
Keep taking those pictures no matter what your friend says -- the folks here enjoy photos with the posts.

I wasn't sure if select was better or if choice was. :laugh: They were still the best steaks I have done before.
I didn't need to cook them long because they were warm already. I was afraid to have the temperture higher because they told us to stay below 500 for ten cooks when they set up the egg.
