Ribs, starting off on the wrong foot!

Well, I had been thinking about ribs all week and was looking forward to some egg action today.

Had a three pack from Sams in the freezer, so I pulled them out Friday night and put them in the fridge. Woke up this morning around 8 to start a little prep and to my dismay.....they are still frozen.

I went ahead and pulled them out.....but not sure how long it may take for them to full thaw. :( Bummer

Drop them (in a plastic bag) in 100° water, change it out every 15 minutes - should be thawed in less than 45 mins

Put them on partially frozen if you can get them apart. They'll be fine.

They don't have to be completely thawed. Or thawed at all for that matter unless you're going to do a hi-temp cook. The same goes for butts. Fat thaws faster tham muscle because of the difference in density and ribs and butts have a high fat content.

Thanks for the tip! I was going to give them about an hour to see how they do and then might do the hot water bath that you suggested.

By chance, has anyone reading this done a longer cook on ribs....like 4-5 hours at 250ish? I'm not feeling the whole 3-1-1 method today.

You could run them under some cool water (not even warm) for a few mins. Make sure to pat them dry before applying rub, etc.

I think you can defrost them in the micropwave? Or you can run them under hot water in the sink real quick. I thawed mine out last night but have a diffrent question.

I put them on the counter and they thawed out all the way and then I put them back in the frig. Do I have to take them out again to get to room temperature again before I put them in the egg?

Do I cut them up before I put them on the grill? I am doing baby backs that came in a package all in one long piece.

yes an easy method
- just get egg stable in the 225-250
- put on some rub
- cook about 3 hours bone side down
- I know some/most don't but i then put on a little butter and foil each rack separate and cook bone side up for about 30min to 1 hour.

You don't have to bring them up to room temp before putting them on.

You can cut the slab if you want to. I usually cut the ribs across to make riblets and they cook the same.

You can certainly cut them down to more manageable pieces. I wouldn't cut them up into individual bones though. If they fit on your grid then leave them in one piece. Makes going to and from the egg much easier.

I'd keep them as cold as possible, makes for a better smoke ring.

It really isn't a good idea to microwave them. The warm water is OK but don't take them out of the plastic first.

I like to leave them in a single slab if they fit. makes the fold over test easier for checking when done.

Thank you Steven. I put them on already for the 4' oclock foot ball game.

I already took them out of the plastic last night to thaw but will leave it on next time. They thawed pretty quick on the counter. Mom was up at5 for work and they were thawed.

Well, may need some advice again...

Murphy's law kicked in today and just as I was about to fire up the grill....the washer machine started leaking all of the laundry room floor! Been dealing with that all afternoon.

In any event, the grill is almost stabilized and ready for me to throw the ribs on (3:00 pm est!!!!)

Any suggestions on a quicker, abbreviated cook??
