First Boston Butt

I am going to try my first butt tomorrow it is 7lbs.. Here is my plan.
3:00 am get egg started
3:30 put on butt
250 deg.
plate setter drip pan on plate setter
Rub butt with Dizzy Dust
put butt directly on grate.
Cook until internal is 130 deg.
Take off and double wrap with foil and cook until internal it 160 deg.

Any other suggestions?

If you want pulled pork from that butt, leave it on the Egg until the internal temp is at least 190, I usually go to 200. I'd plan on 14 hours cooking time, which should leave a little wiggle room to let it rest in foil after taking it of the Egg.

Yea... Allow more time to stabilize the temp, and put in the plate setter and drip pan to get it all stabilized.

Then skip the foil completely. No need for it when cooking a butt.

And take it to at least 195&deg unless your plan is for sliced pork. If you want to slice it then take it to 170&deg or so.

The butt is 7 lbs can I remove half when it reaches 170 and leave the rest until 200 for pulled pork?

I was going to open the egg and cut the butt in half. If you think it is a bad idea then I won't try it.

You know there's a big bone in the middle of it, right?

If you really want to do it two ways, halve it before you cook it.

oh did not know about the bone. It my first butt I will leave it as is. I will update with pictures tomorrow and let you know how it went. thanks for the help. If anyone has any other suggestion it will check back in while i wait fot the temp to stabilize in the morning.

Let egg stabilize for at least an hour @ 250* or you could end up chasing temp for entire cook.....no fun, so I've heard

Good luck Rainman. Depending on when you want to serve it, you may want to consider starting the Egg around midnight so that you have that hour to stabilize. If your going for pulled pork it'll take 1.5 - 2 hrs per pound. Hope that helps. Best of luck on your first and here's to many more!!

My first butt is in. I let the egg stabilize for one hour as suggested. Now I wait. This is almost as exciting as getting my first girlfriend.

My experience is 2.5 minimum to 3 hours per lb for pulled pork. I hear of others who do it in less but I don't know how, I suppose at 300 dome it is possible but I prefer low and slow.
